Mrs. Erin Brashears

Hello fellow bloggers!
I have so missed my blogging. So much has been going on in life-wonderful things. I will try to catch you up on what's been going on since I last posted.
Well let's see......where to begin.....

On July 31st, 2014 I entered into a courtship with Kenneth Brashears. We had met at our church in Claremore and I was and am really good friends with his sister and brother-in-law's family. He is in the Army and was deployed to Afghanistan when we really began to get to know each other. Let's just say I am very thankful for Skype. haha. In October, he came home and took a month's leave so we could spend a lot of time together. There was not a day that month that we were apart. About halfway through that month, he (with of course my father's permission) popped the question. It was the perfect day. He planned it for when we were working at Fort Rock (the Christian family camp I volunteer at in Arkansas) (fortrock.org). He asked me in front of the entire camp at my favorite location with a gorgeous view overlooking the beautiful Ozarks. That day, October 18th, I said I would spend the rest of my life with him.
He had to head back to his base during the first week in November. We decided on December 19th for the big day. That was a long month before we were able to see each other again. He was able to come home a few days before the wedding. I (with our chaperone) went to pick him up from the airport. He had flown in so that we could make the drive to TN together. So now, we reside in TN. He doesn't have much longer in-about a year and a half-after which we plan on moving back to our homeland of Oklahoma to be near family and friends.

Not only have I been getting used to the adjustments of married life, moving away from family/friends, living in the middle of a city about 15 times the size I'm used to (yes I said 15. My hometown is about 9,000 and our town here in TN is about 142,000!!!), settling into my own home, but I am now preparing for the next step....motherhood. Yes, that's right, we are expecting! We expect our little one to arrive the end of September/beginning of October. My due date is actually on my momma's birthday-September 26th! So needless to say, these last several months have been crazy. But when I say crazy, I mean that in a good way. I have an amazing husband, and I can't imagine my life without him. I am so thankful to God for him. He is always to patient with me, especially right now as I am trying to get through this fun first tri-mester sickness. lol.

Anyway, if I could, I ask that you would help pray for us as we enter into this next phase of life. We are praying for a happy, healthy pregnancy and baby!

No Greater Joy Ministries



I just wanted to take a minute to say how grateful I am for Michael and Debi Pearl's No Greater Joy Ministry. They are such a sweet couple and I really enjoy getting to hear them speak. If you haven't heard of their ministry before, you need to check out the link here. I promise you, it will be a huge encouragement in your life and family. They are all about helping to strengthen the family and teaching how the man is the head of the household and how God made woman to be a help meet for him. They have many good books but I'm going to take a guess that some of their most read books are Created to Need a Help Meet, Created to Be His Help Meet, In Search of a Help Meet, and Preparing to Be a Help Meet. These are great books that help to outline what a Christ-focused marriage and family should look like. Also another one of Mr. Pearl's well known books is To Train Up a Child.
Although I am not a wife nor a mother yet, I still think it's important, as a single Christian young lady to prepare for this time in the future. It's always great to receive advice from people that have been there and know what struggles might come.

Our family has also been to a couple of the NGJ Shindigs. It was so nice to be surrounded by a couple thousand other people who were pretty like-minded with our family's beliefs and convictions. I am so thankful that they saw the need for such an event and put so much work into making it all happen.

They also have a great channel on YouTube with many many videos. I highly recommend looking them up!

Change





Wow, I can not believe it is already June 4th!! Time is passing by so fast it seems. I have volunteered at Fort Rock several times already this year. We have had great turnouts so far. This last camp was at max capacity. It was an American History Family Camp and we were happy to have guest speaker Mr. William Federer.

So far I've been busy with my vinyl decal business, volunteering at camps, gardening, and just normal everyday housework. I have to admit, I'm not looking forward to this warmer weather that's about to begin. I'm a cold-weather, cool mountain air, jacket-wearing kind of girl. But none the less, the heat always comes. I just pray it isn't too terribly bad this year.

So lately I've been thinking a lot about change. It's something that is inevitable in life. Sometimes it's good, sometimes it's bad. Here a while back I was visiting with a friend about when I graduated from homeschool high school and it occurred to me that it has been 5 years since my graduation. Where in the world has time gone? I used to think that adults were crazy when they said that time goes faster as you get older. Now that I'm an adult, I see exactly what they mean. I know lately in my life, I've been having some changes take place. All good, just things happening and going on that are different and out of the ordinary for my everyday life.. It really gets a person to thinking-how am I using my life to make a difference for Christ. We are only on this earth for but a blink of an eye, and how are we spending that time? We all have different phases of life: childhood, the teen years, young adult life, married life, parenthood, becoming grand parents, etc. Sometimes it seems that when you feel you are ready for your next phase, it couldn't come quicker. Then when you reach it, you wonder where the time went. Or at least, that's how I feel sometimes. I've been making sure that I am really stopping and enjoying the phase of life I'm in right now, whatever that might be. It's really great to know that God has me in the phase in life that he wants me in because He knows best. And I'm ready for whatever it is that He brings my way! It's a great feeling to know that I don't have to worry about it, just trust in Him. Stop and smell the roses and enjoy every second, moment, and every hour of my days. Whether that be doing laundry, baking bread, having a Braums's ice-cream with the family, or Skyping with a friend.

Egg Shell Planters



So if you do much gardening, you probably know that it's best to start your seeds inside, before planting them. Our family is trying out a new technique this year. As always, we've procrastinated getting our tomatoes started, but we shouldn't be too terribly far behind. We're using egg shells as our "planters". They are chalk full of calcium, which is a vital nutrient for a good plant to grow strong and healthy.
So here's how we do it:
For any meal that we use eggs in, we save the shell. We're very careful when cracking them, to try and make it as clean of a break in the middle of the shell as possible. This way one egg shell can make 2 planters. We wash out the shell really well and make sure we get the membrane all out of the inside. This ensures bacteria won't grow. Then we lay them upside down on a paper towel until dry.
Now pull out an empty egg carton and place one half shell into each space. Now fill them with potting soil (we prefer organic non GMO). Place one seed in each shell of whatever seed you're planting. Cover up with a little more soil. Water thoroughly, without drowning the seed.
Water daily, or as needed
The plants do not need to be placed in the sunlight until you see them begin to peak their leaves above the soil. Make sure and keep your lid to your egg carton closed, this makes the perfect miniature green house. As soon as they begin sprouting, you need to sit them in a sunny location inside such as a window sill and open the lid.
*Note: If you use the cardboard egg cartons, it will absorb all of the moisture up
 
 
As soon as your seedlings are big enough to go outside (when your plant grows it's first set of true leaves), you can take each egg shell out and plant them.(crush up the egg shell with each plant to keep the great source of calcium near the roots)

Why We Choose to Eat Butter Instead of Margarine

 So my mom has always been a firm believer that we should eat actual butter instead of margarine. She's always jokingly called margarine 'Melted Plastic'. It's been a few years now since we stopped buying margarine. About a year ago, we found an article telling the differences in the 2 products. What we found completely disgusted us and scared us!!
So even though Margarine and Butter have about the same amount of calories, Margarine has the following issues:
  • Is very high in trans-fatty acids.
  • Triples the risk of coronary heart disease.
  • Increases total cholesterol and LDL (the bad cholesterol), and lowers HDL cholesterol (the good cholesterol).
  • Increases the risk of cancers up to fivefold.
  • Lowers the quality of breast milk.
  • Decreases the immune response.
  • Decreases the insulin response.


  • Would you like to know how Margarine was invented?
    "Did you know that the hydrogenated fat they use in fast food restaurants in the deep-fat fryers was originally designed as candle wax?  When it didn't work as planned, they looked for a new use for
    it, and found it worked great for frying foods and never going bad.

    Margarine was originally manufactured to fatten turkeys.  When it killed the turkeys, the people who had put all the money into the research wanted a payback, so they put their heads together to figure out what to do with this product to get their money back.
    It was a white substance with no food appeal, so they added the yellow coloring and sold it to people to use in place of butter.  More recently, they have come out with some clever new flavorings."

    Oh, yes, and there's one other thing I might want to mention: Margarine is only ONE molecule away from being plastic!!!!!! So turns out Momma has been right all these years-margarine really is basically melted plastic. :-)
    You should do this little experiment for yourself:

    -Purchase a tub of margarine and leave it in your garage or a shaded area. Within a couple of days, you will note a couple of things:

    -No flies, not even those pesky fruit flies, will go near it.  (That should tell you something.)  It will not rot or smell differently, because it has NO nutritional value.  Nothing will grow on it.  Even tiny microorganisms will not a find a home to grow on.  Why?  Because margarine is nearly plastic.

    Would you melt a plastic bowl and spread THAT on your pancakes??

    So after you finish reading this post, you may have learned a little more about your margarine that's in your fridge than you would have liked to know. Now what will you do with this knowledge to save your family??

    Ball a Huge Success


    Well guys, another Homeschool Civil War Ball has come and gone and it was a huge success!! I'm so thankful that the Lord has blessed this event so graciously. People always thank me for all the hard work I put into it, but in complete and all honesty, I love doing it. I'm an organizer and planner, so it's actually super fun to me. It just thrills my soul to see all of those homeschool families there enjoying themselves in a safe and conservative atmosphere. How often, anymore, do families take time to have good old-fashioned family fun. This world concentrates so much on the children getting away from the parents, that they lose the knowledge that you can have fun with your family. Our family should be our best friends, and then other friends will fall into place. I am just so thankful that the Lord has allowed me to host this event for 2 years now. Lord willing, I will have another one in the Fall!!

    Homemade Chicken and Noodles

    Yes, I am well aware that my last post was about our healthy kick, and homemade noodles doesn't exactly fit into the 'healthy' category. But we made these here while back, and I forgot to post.
    A couple years back, Momma started making homemade Chicken and Noodles. It is one of Daddy's favorite meals ever-he would eat them every day if he had the chance. I'm not a soup fan, but if I'm going to each chicken and noodles, I'd much rather have these homemade ones. People think homemade noodles are difficult, but they really aren't that bad. And the taste is well worth the effort!!

    Here's what to do:
    Boil 2 bone-in chicken breasts with:
    1/2 onion, chopped
    salt
    pepper
    carrots or celery (optional)

    Once your chicken is done, turn your stove off for the time being. You will need to de-bone it by pulling all of the chicken away from the bones with your fingers. Now you are ready to make your noodles.

     Get out a large cutting board (or if you prefer, you can do this in a bowl) and measure out 2 cups of flour. Also a sprinkle of salt, pepper, and a little garlic. Take your fist and make an impression in the middle of your pile of dry ingredients.

     
    Now place your 2 egg into the indention that you created.
     
     
    Now slowly mix with your hands until all ingredients are well combined (this is going to be a bit messy). If your mixture is too moist, add more flour. If it is too dry, add a small amount of water.
    When you have your dough to the correct consistency, move your ball of dough to the side. Remove any remainder of dough you have on your board.

     Then well flour the cutting board. Now roll out your dough. It needs to be very very thin, because as they boil, they will plump up.
     
    Now you can use a pizza cutter to cut the noodles to the width you would like. As you cut them, reflour them and place in a pile to the side.

    Now is the time to put bring your broth back to a boil. Add your chicken. As soon as the water is at a rolling boil, add in your noodles. They will literally need only a couple of minutes. As soon as they begin to float, they are finished. Now turn down the heat to Low to keep warm.


    Serve and enjoy!!

    Healthy Kick

    So my sister and I have been on a little diet. We each have our own different weaknesses, so we've been working on holding each other accountable. Some of the things we've been cutting back on:
    I hardly ever eat anything for breakfast, which I know is not healthy. So, in the morning, I've been getting up and fixing us each a smoothie for breakfast. Then sometimes we might eat a piece of sausage with it to give it some protein. Some ingredients I use for our smoothies are: brown cow yogurt, whatever frozen fruit we have (strawberries, pineapple, peaches, blueberries, etc.), honey (or even some flavored honey we have), sometimes a splash of milk, and some ice cubes. The other day, we had some organic spinach that I put in one to add a little extra protein. It didn't look pretty, but it tasted yummy.
    This is one I tried with some peanut butter. It didn't look that pretty, but
    the taste wasn't that bad. Next time, I wouldn't add quite as much peanut
    butter as I did.


     

     I also made some healthy Banana Crunch Muffins the other day. A friend brought them to church and shared the recipe. They are super good. Here is the recipe. This is actually a revised version of the original. The original actually called for things such as twice the amount of sugar and butter instead of the oil.

    Banana Crunch Muffins

    3 Cups Flour (I use unbleached)
    1 Cup Sugar (I use Evaporated Cane Juice)
    2 tsp. Baking Powder
    1 tsp. Baking Soda
    1 tsp. Salt
    2 eggs, lightly beaten
    3/4 Cup Milk
    2 tsp. Vanilla
    1 Cup Melted Coconut Oil, cooled
    3 Mashed Bananas
    1 Cup Oats (I use Old Fashion Rolled)
    1 Cup Chopped Nuts (I use pecans)

    Preheat oven to 350 degrees. Line 24 muffin cups. In a bowl, mix the flour, sugar, powder, soda, and salt. Mix in the eggs, milk, vanilla, and oil. Fold in bananas, oats, and nuts. Fill muffin cups most the way full. Bake for 25 min or until toothpick inserted comes out clean.

    I will say that besides us loosing a few pounds, I definitely have felt better since watching what I eat more. We haven't taken it to the extreme, but just watching more our portions and ingredients has helped. We've also been trying to be better about our water in-take. She likes pop and I like sweet tea. We have made a commitment to have one only once a week.

    Organization

    So I'm all about making life at home easier and more organized. Anyone who knows me, knows that I am a list kind of girl. I make sticky notes everywhere I go when I think of things that need to be done. My sister has a gigantic marker board in our front room for school.     Happy New Year!!

    Happy New Year to everyone! I pray everyone had a blessed Christmas and New Years spent with family and friends.
    So what are my New Years Resolutions, you ask? Well this year I have decided to only set small goals throughout the year for myself. I think the world focuses so much on setting the big resolutions, know good and well that they probably won't be kept. Not saying this is a bad thing, but we all have busy lives and some things just have to get pushed to the side. So here are some of my goals that I would like to work towards.

    -Grow closer in my walk with the Lord
    -Keeping my blog more up to date to interest my readers (and hopefully gain more followers)
    -Make sure I am staying profitable everyday in my down times
    -Staying better prepared with doing things such as better meal planning and freezing meals a couple of weeks at a time
    -Growing my home business more, while being a stay-at-home daughter, to save up for things in the future
    -Keep learning more about aspiring to be a homemaker and homesteading

    Christmas Cookies

    So with the Christmas season, comes lots and lots of baking. I always love trying new recipes, so this is one of my newest recipe experiments, and... these are amazing!! They taste like a Reese's peanut butter cup cookie. They are super easy to make, and are great to take to your Christmas party or dinner.



    *Recipe modification: I make the balls of dough and filling half the size that is says. When I did it the size it said, it just made them massive. Doing them smaller, you can get twice the amount of cookies. :-) 
     
    Chocolate Dough
    1 1/2 cups all-purpose flour
    1/2 cup unsweetened cocoa powder
    1/2 teaspoon baking soda
    1/4 teaspoon salt
    1/2 cup granulated sugar (plus extra for dredging)
    1/2 cup brown sugar
    1/2 cup (1 stick) butter, softened
    1/4 cup smooth peanut butter
    1 teaspoon vanilla extract
    1 large egg plus 1 large egg yolk
    Peanut butter filling
    3/4 cup peanut butter, crunchy or smooth, your choice
    3/4 cup confectioners’ sugar
    Preheat the oven to 375°F. Lightly grease (or line with parchment) two baking sheets.
    To make the dough: In a medium-sized bowl, whisk together the flour, cocoa, baking soda and salt.  In another medium-sized mixing bowl, beat together the sugars, butter, and peanut butter until light and fluffy. Add the vanilla and the egg, beating to combine, then stir in the dry ingredients, blending well.
    To make the filling: In a small bowl, stir together the peanut butter and confectioners sugar until smooth.  With floured hands or a teaspoon scoop, roll the filling into 26 one-inch balls.
    To shape the cookies: Scoop 1 tablespoon of the dough (a lump about the size of a walnut), make an indentation in the center with your finger and place one of the peanut butter balls into the indentation.
    Bring the cookie dough up and over the filling, pressing the edges together cover the center; roll the cookie in the palms of your hand to smooth it out. Repeat with the remaining dough and filling. Roll each rounded cookie in granulated sugar, and place on the prepared baking sheets, leaving about 2 inches between cookies. Grease the bottom of a drinking glass, and use it to flatten each cookie to about 1/2-inch thick. Bake the cookies for 7 to 9 minutes, or until they’re set and you can smell chocolate. Remove them from the oven, and cool on a rack.

    Christmas Quickly Approaching


    I can hardly believe Christmas will be here in just 6 days!! At the beginning of the year, it seemed this year would never end. Now, I'm wondering where in the world time went. To think that 2014 is just around the corner is almost overwhelming.
    This week, we have been running around trying to finish all of our Christmas shopping. You know how that goes, "oh no, I wonder how much shipping I'll have to pay to get it here in time..." I think we all do it. But it's so easy to get caught in the crazy rat race of the holiday season, that we forget what Christmas is all about. It's not about the bows, stockings, or Santa Claus. It's about celebrating the birth of our Lord, Jesus Christ. Instead of spending tons of money on gifts that people don't even need, why not take that money we would have spent, and go spend it for the needy. Buy some warm mittens, hats, or coats and go hand them out on the street. Christmas is not about just keeping the joy of our Saviour to ourselves in our own home. It's about sharing the love of Christ with everyone we meet. We were placed on this earth to share the Gospel.
    I challenge you, this Christmas season, to get out of your comfort zone and see what you can do to share the love of Christ.
    Here's some ideas of things you could do:
    -Give atleast one of your Christmas gifts (that you receive) up to someone who you know that needs it more than yourself.
    -Take your money you would have spent on yourself on junk food this month, and buy extra warm coats/hats/gloves and go hand them out on the street where you know homeless people stay
    -Make extra Christmas cards with the Gospel on them and pass them out to the first 50 people you see.

    Christmas Baking Ease


    So just recently my sister and I threw a baby shower for a very dear friend. The theme was Beatrix Potter, so we made iced sugar cookies shaped as carrots and put them in a cup full of cookie crumbs (to look like dirt). They turned out adorable! Anyway, back to my point. It was fun making them and all, but we had to bake and ice 160 carrot cookies!! Not exactly something that can easily be done in one day. So, we ended up baking them and layered them in a box with wax paper in between and stuck them in the freezer (uniced). Then the day before the shower, we pulled them out to thaw and then promptly spent 3 hours icing them. But, the point is, being able to freeze the baked cookies made life so much easier!
    This tip comes in handy even more so during this busy holiday season. Sometimes we make up our fruit bread and freeze it as well. That way you could have all of your baking done way ahead of time. Day of your celebration, just pull it all out to let it thaw and your ready to go. Your guests will think you've been slaving all morning before their arrival. This is such a time-saving tip that will make your life so much easier!!!

    Why Modesty??

      So many people I know wonder why I have chosen to dress so differently the past few years. Well, I can give you a brief history of why I have chosen to dress the way I do. Growing up, my parents were always careful about the way my sister and I dressed... or so they thought. When I was little, I had no conviction about making sure I was dressing to please the Lord. I had no problem wearing 2 piece swimsuits, short skirts, or strapless tops. Fast forward until I was about 16 or so. I was still in public high school and I began to realize how the other girls were dressing, and how it was leading to things I understood were not Christ-like. Every once and a while, I would wear a skirt to school (mind you, I still hated skirts at this time) and every time, people would pretty much make fun of me. So, I would revert back to wearing jeans. Fast forward until my senior year. My parents pulled me out of public school to be homeschooled. As I began to run with the homeschool crowd, I started noticing how most of the other families were dressing. I decided I would try to start wearing skirts more often. At the time, I was working at a local sports store. Part of our uniform was khaki shorts or pants. One day I showed up with a modest khaki skirt on, thinking I still looked the part. It so happened my General Manager stopped by. Sometime in the day, he pulled me aside and told me I was not to show back up with a skirt on, because it wasn't a part of my dress code. I did not feel strong enough back then to stand up and tell him I had begun to wear them because of my religious beliefs, so I was a coward and agreed I wouldn't. After that day, I began feeling guilty about backing down so easily, but not guilty enough to wear a skirt back to work. I always had a false belief that dressing modestly meant dressing like I was living in the wrong century, and that you couldn't be stylish and modest at the same time. Boy, was I wrong.
      It was soon after I left that job, that I began to really feel convicted that women just shouldn't wear pants. Ever since then, all I have worn are skirts, and that's been about 3 1/2 years now.
    Deuteronomy 22:5 says "The woman shall not wear that which pertaineth unto a man..." It took me a while to understand why, but God finally just shoved it onto my heart that it's really hard to dress modestly in pants. You are constantly having to pull them up or pull your shirt down to make sure you aren't exposing skin. Why not dress like a lady and not have to worry as much.
      I'm not saying all this to say women/girls who wear pants are evil, I just wanted to share my story with other girls who might be struggling the same way that I was. If it wouldn't have been for the woman in my life dressing modestly, I may have never changed my thought process.
      I also am not trying to be legalistic with modesty. Not only are we dressing modestly to guard our bodies for ourselves, but we also need to think about guarding the hearts of the men and boys around us. Women and men alike should be careful what we expose ourselves to, because we need to be guarding our heart and thoughts to save ourselves entirely for our future spouse. I hope this might reach girls/women who think dressing modestly is all about the rules, to show them it's not only a physical issue, it's also a matter of the heart.

    I Love Fall!!!!




    I decided to do a photo shoot with my puppies. And I'm pretty sure they did not enjoy it near as much as I did haha.
    Fall is absolutely my most favorite time of year. It means pumpkins, orange everything, pumpkin pie spice, pumpkin Frappuccinos and cappuccinos, wonderful smells of caramel, and getting out your warm fall clothes. Life couldn't get any better than that.






    Well we went to a friends house the other night for dinner. Everyone was supposed to bring their favorite type of lasagna. Since lasagna is one of my foods I don't care for at all, I decided to make a dessert Pumpkin Pie Lasagna. Let me tell you what, it was AMAZING!! Here's the recipe, you must try it.
